Our olives are collected from healthy trees growing in the Edremit region, located at the foot of Mount Ida (Kaz Dağları). This geographic area is famous for its ideal climate conditions and fertile soil. Our olives ripen in the sun and are harvested at the optimal time.
Depending on the desired final product, harvested olives undergo different processing methods. Natural fermented black olives are matured in olive pools consisting only of water and salt, while green olives go through flavoring processes and may subsequently undergo procedures like pitting, stuffing with red pepper, or crushing, depending on the characteristics of the final product.
